Il menu è abbinato a una selezione di vini, spumante e champagne, in aggiunta ai nostri cocktail e succhi di frutta freschi.

STARTERS

MEZZE (2 people): hummus with broccoli, muhammara, babaghanush, feta cream cheese and vegetables crudités

Roasted beetroot carpaccio with Lebneh cream cheese and local Ibizencan figs


PIDE (Turkish spelt flatbread) with a feta and pistachio cream spread, Kalamata olives, rocket, cherry tomatoes and an agave citric dressing. 


Warm smoked vegetable salad (chargrilled tenderstem broccoli and avocado), with mixed leaves, and a vegan yoghurt dressing

Moroccan spiced chicken salad with a light soya mayonnaise dressing and parmesan 

Green taboulé (edamame, lentils, apple, avocado) and a citric vinaigrette 

Aiyanna's crisp mixed fried fish (baby squid, whitebait and marinated dogfish) with a lime mayonnaise 

Iberian cured Jamón with toasted bread and tomato 

Rigatoni with San Marzano tomato sauce, Kalamata olives, basil and bocconcini mozzarella

Grilled razor clams with grilles leaks and a lightly creamed broth 

Marinated mackerel infused with Hierbas Ibizencas, pumpkin, radish and a fine cream of parmesan

MAINS

Chickpea and quinoa falafel over a spiced tomato sauce 

Roasted aubergine served with bulgur, apio y salsa de yogurt vegano a la menta fresca 

The Aiyanna 100% vegetarian "Beyond Burger"

Homemade hamburger with a truffle mayonnaise and Mahon cheese and caramelised onion 

"Za'atar" spiced free- range chicken, chargrilled in the Josep oven server with grilled vegetables 

Argentinian cut grilled steak (entraña) served with polenta and a side of Mojo pepper sauce 

Slow cooked lamp with "Ras el hanout" marinade served with a hummus of peas and fermented black garlic 

Babecued whole Mediterranean squid with chargrilled leaks and tender leaves 

Roasted whole seabass 

Carabineros (large deep sea Cardinal prawns) chargrilled in the Josper oven served with a side salad

Spanish black rice with cuttlefish, prawns and a kaffir lime mayonnaise 

Spit-grilled sardines served on a salt bed, with a wasabi and citric vinaigrette 

DESSERTS

Banana lightly baked and caramelised in coffee and hazelnut liqueur

Tiramisú "Aiyanna"

Aiyanna's chocolate crumb cake with "Frigola" liqueur and orange ice cream 

Fresh seasonal fruit plate with vegan yogurt and a touch of lime 

Caramelised Torrija (Spanish French-toast) with a sweet pumpkin sauce and vanilla ice cream 

Mojito sorbet
